If you or someone you know or love is seeking to wean themselves from junk food, this is a great way to introduce how to real a label for real food ingredients. I know so many who struggle to start a healthy life journey and balk at trying "healthy foods" as they anticipate a bad taste or having to make everything from scratch. Many have been shocked then frustrated with the reports of arsenic in rice. The health concern arises not from the naturally occurring organic arsenic in some soils, but from inorganic arsenic used as a component of pesticides and insecticides before they were banned in the 1980's remaining in the soil. Does this mean we give up rice entirely, especially brown rice with its health benefits? Rice is one of the most affordable and available (and widely accepted by picky eaters) non-gluten whole grains ( and one of my favorites). This is good news as you can get the Archer Farms organic rice at Target for ~$5 for 2 lb. The other good news is that Target also sells Dynasty brand Jasmine rice from Thailand that is very tasty and less than $3 for a 2 lb zippered bag. You can find Lundberg organic rice at Whole Foods, your local co-op/health food store, Kroger and Target stores. There are even some Walmart SuperCenter stores in which I have seen Lundberg rice (in the tiny gluten-free aisle). Kroger and Target frequently have natural and organic whole grain products on sale so the price is not outrageous. For those on a gluten-free or reduced gluten lifestyle, consider experimenting with other whole grains such as oatmeal (cheap, tasty and available) or even chickpea flour for baking. There are some varieties of quinoa pasta I have seen in the stores as well. Other places to find gluten-free products include Kerr Drugs, Wal-mart and Target. Enjoy. I am always looking for nut-free, recipes for budget friendly meat-free protein sources everyone can enjoy that re-heat well to make my life easier. The kids and I had fun experimenting to adapt these recipes to our tastes. These recipes are now a favorite of my family. Recipe #2 is the result of my experiments with a gluten-free, soy-free version of the first chickpea cutlet recipe as most of the time I don’t keep wheat gluten on hand but oatmeal is a standby in my pantry.
